Coffee Chia Pudding. Easy to make and perfect for dessert whenever you’re craving something indulgent but want something healthier.
This coffee chia pudding entered my life a couple of years ago after a long boring day at uni. I was tired, had no energy and has this immense craving for a tiramisu. But I did not have tiramisu at home, nor did I have the ingredients to make one and definitely not the energy to make one. But I had some cold coffee in my coffee pot and then I got thinking and I came up with the idea to make a
Coffee Chia Pudding
Then I would get that coffee taste as well as something sweet and dessert like! It ticked all the boxes! So I made it and it was absolutely delicious and satisfying! Since then I’ve made this chia pudding many times.
I will provide a recipe with amounts to use, but to be honest, I usually wing it and it turns out perfect every single time.
Serve it as it is, or top it of with a little bit of whipped cream and grated dark chocolate if you really want it to be more like a dessert.
It might not be a tiramisu, but it’s a pretty good substitute.

- 200 ml (3/4 cup + 1 tsbp) coffee
- 200 ml (3/4 cup + 1 tbsp) milk
- 2 tbsp golden syrup (honey or maple syrup work as well)
- 8 tbsp chia seeds
- 0.5 tsp vanilla bean powder
- Grated chocolate
- Mix all ingredients
- Let chill for 4 h (or overnight
- Serve with whipped cream and grated chocolate
