Spicy miso beef with pickled cucumber salad

Ingredients

Quickly pickled cucumber and carrot salad

  • 1/2 cucumber approximately 250g
  • 1 carrot
  • 1/2 spring onion
  • 1/2 tsp salt
  • 1 tsp apple cider vinegar
  • 1 tsp sesame oil
  • 1 finely chopped garlic

Miso spicy beef

  • 300 g entrecote
  • 1 tbsp miso paste
  • 1/2 tsbp sambal oelek
  • 1 tbsp brown sugar
  • 1/2 tbsp light soy sauce
  • 1/2 tbsp sesame oil
  • 2 tbsp water

Instructions

Quickly pickled cucumber and carrot salad

  • Prepare the marinate by combining the salt, apple cider vinegar, sesame oil and garlic in a bowl. Slice the cucumber finely (use a mandolin if you have one) and julienne the carrot. Finely slice the spring onion. Place the vegetables in a bowl, and pour the marinate over. Leave to rest while preparing the beef (15 min).

Miso spicy beef

  • Finely slice the beef. Fry the beef on high heat for 1-2 minutes until browned.
  • Add miso, sambal, brown sugar, soy sauce and sesame oil. Fry, and add water. Fry for half a minute.
  • Serve with the cucumber salad with rice or cauliflower rice. Sprinkle some sesame seeds over if available.
