Ginger Chilli Lime Chicken!
Chicken thighs marinated in a delicious lime, ginger, chilli and garlic mixture! Perfect to grill on the bbq or in the pan!
Summer is here! It’s green and lush outside and it keeps getting warmer and warmer and I’m soo excited about it as I’m a person that strives when it’s sunny and warm outside, as most people do. I say most, as I actually know a person who hates summer. Weird right?
Any who, as summer is here and the majority of the population actually enjoy summer and the outdoor food and drink related shenanigans happening during this season, I thought it would be great to share this ginger chilli lime chicken which is great for summer!
I feel like I’m a broken record, but this recipe is so easy. I do like recipes that are easy but when the chef cooks, he can make some pretty complicated stuff and it can be quite the spectacle to witness 🙂 But when I cook I like to keep it simple and fresh, but still not sacrifice any flavour! And I always like to check with the chef to see if he approvs of my ideas too!
Making this ginger chilli lime chicken is pretty straight forward. Chicken is marinated in lime, chilli, ginger, garlic and oil and left for to marinate for ideally 4 hours, but if you’re short on time, 1 h will do, just about. When marinating the chicken, I either use a mild olive oil or rapeseed oil which both have a mild flavour! And when cooking this chicken, it’s important to cook it on a medium heat. Normally, I would cook the chicken on a higher heat, but in this recipe, it will burn the honey in the chicken marinade and you’d be missing out on loads of the lovely yummy flavour of the marinate. If you cook it on medium heat, it will cook, and the marinade will gently caramelise instead of burning and it will taste great and zesty!

Juicy Succulent Ginger Chilli Lime Chicken! Great with a green lush salad, or any salad really. Perfect to cook both in the pan and to BBQ!
- 4 tbsp lime juice
- 4 tbsp olive oil or rapeseed oil
- 1 tbsp honey
- 2 tbsp minced garlic
- 2 tbsp minced ginger
- 6 tbsp coriander /cilantro (leaves & stems)
- 2 tsp chilli flakes
- 2 tsp salt
- pinch of black pepper
- 1000 g /2 lb chicken thighs (skinless and deboned)
Place all ingredients except for the chicken into a bowl. Whisk until fully combined and emulsified.
Add the chicken either directly in a bowl, or place the chicken in a plastic bad and pour the marinate over. Massage so all the chicken pieces are fully covered and place in the fridge to marinate for 4 hours.
Once marinated, cook on medium heat for 3-4 minutes or each side, or until the chicken is done! If BBQing, grill on a medium heat.
Place the chicken on a plate, cover with foil and leave to rest for 5 minutes.
Garnish with chopped coriander/cilantro before serving.
