Jazz up your breakfast with this incredibly delicious coconut milk porridge!
The other day when I made this coconut milk porridge for myself, I had the most amazing light ever in the kitchen, so I had to seize the moment and take a picture of it, and share it here of course.
The name of the recipe kinda speaks for itself, as this is simply porridge made with coconut milk! Easy right? All you have to do is to place all the ingredients in a sauce pan, cook for 3-5 minute until all liquids have absorbed and your breakfast is done! All that’s left is to add your toppings!
I like to serve this with a good dollop of peanut butter (or almond butter), some plump juicy blueberries (raspberries are amazing as well!), desiccated coconut and a little drizzle of maple syrup or honey!
This breakfast is packed with of dietary fibre, healthy fats, vitamins and minerals that will keep you energised for the whole day and give your body what it needs! If you’re feeling extra hungry, have a boiled egg on the side for a boost of protein!

Coconut Milk Porridge
- 1/2 cup oats (40g)
- 1/2 cup water (112 ml)
- 1/2 cup coconut milk (112 ml)
- 0.25 tsp vanilla bean powder or vanilla extract
- Add the oats, water, coconut milk and vanilla to a sauce pan. Cook on low medium heat for 5 minutes, or until the water has absorbed and the oats are cooked.
- Enjoy with toppings of your choice ( but I highly recommended berries, nut butter, maple syrup, desiccated coconut and a splash of milk)
