Carrot and Swede Mash
Carrot and swede mash is a great side dish to roast dinner, meatballs or a stew!
- 350 g carrots
- 350 g swede
- 25 g butter (or olive oil)
- salt and pepper to taste
Peel and dice your carrot and swede into evenly sized pieces.
Add the diced vegetables into a pan of water so the water just covers the vegetables. Add a big pinch of salt and bring to a boil. Leave to cook for 10 minutes or until the vegetables are soft.
Once soft, drain the water. Add the butter/oil and mash it with a masher. Add salt and pepper to taste.
Enjoy with roast chicken, lentil loaf or meatballs!
- If you don't own a masher, you can mash it in a food processor. If you make it in a food processor, pulse it carefully so it gets mashed and not turn into a puré.
