Preheat oven to 200° C / 392°F
Cut the cauliflower into florets.
Take the whole garlic bulbs and lightly crush them with the flat side of a knife or your hand.
Place the cauliflower and garlic on a lined baking tray. Add oil and salt and massage it all with your hands.
Bake for 10 minutes. Take out, sprinkle the parmesan and bake for another 5-10 minutes.
Chop your parsley and sprinkle over the roasted cauliflower.
