Carrot Cake Bliss Balls

Ingredients

  • 50 g / 1/2 cup carrots grated
  • 100 g / 1 cup dates pitted
  • 60 g / 1/2 cupcashews
  • 60 g / 2/3 cups rolled oats
  • 0.5 tsp cardamom
  • 0.25 tsp cinnamon
  • pinch of salt
  • 1 tbsp fresh orange juice
  • zest from 0.5 orange
  • 1/3 cup desiccated coconut

Instructions

  • Place all ingredients in a food blender.
  • Blend until a dough forms.
  • Roll the dough into even sized balls.
  • Roll the balls in desiccated coconut.
  • Place in the fridge for a minimum of 1 h before serving, so they can firm up.
  • Store the carrot bliss balls in the refrigerator up to 4 days or in the freezer up to one month.
