A new year and a new start. And what better way is there to start the year with some good ol’ pancakes?
These are a favourite of mine, and a spin of the popular banana pancake that can be seen all over the internet. I’ve made these for years and years and love them as they will keep you full for long.
As well as being amazingly tasty to eat, they are GOOD for you! One portion of these (based on recipe for 3 persons) will fuel your body with
- Vitamin B2, B5, B6, B12
- Vitamin D
Selenium prevent your cells from oxidation (keeping them in tip top form). The vitamin B’s are good for the nervous system and hair, skin and nail. Vitamin D is quite hard to find in food as the main source is the sun. One portion of these gives you 20% of your daily recommended intake of vitamin D. Eating these are a pleasure as well as being good for you and your body.
They are wonderful to eat with a sprinkle of cinnamon, or with fresh berries…
I like to eat mine with some fresh berries and a drizzle of acacia honey.
And preferably a stack of them.
And I admit, this recipe can feed 3 persons, but I ususally go halves with the chef.
- 1 large ripe banana
- 3 large eggs
- 2 tbsp coconut flour
- 50 ml milk of your choice
- Coconut oil
Mash the banana with a fork until smooth without lumps.
Add eggs, coconut flour and milk.
Let rest for 10 minutes
Fry in (coconut)oil
Devour with a sprinkle of cinnamon, fresh berries or with a drizzle of honey.
