Here is a good and healthy dessert for you. Basil and lime marinated strawberries! Fresh, healthy, and super yummy. What more can you ask for?
One of the best things with summer is that it’s the season for strawberries. I mean, you can get strawberries throughout the year, but nothing beats the taste, smell and colour of sun ripened strawberries!
When it’s summer I consume so many strawberries so I seriously need to start having a separate budget for them… But they are good for you, being rich in both vitamin C and folate! So that’s ok.
And even though these little red jewels are perfect to nibble on au naturel, marinating them is perfect if you want to turn them into a fresh and healthy dessert.
If you haven’t tried marinating strawberries, you must try it asap.
Marinating them brings out the flavour and sweetness from the strawberries even more. There are many ways you can marinate your strawberries, but one of my favourite ways is to marinate with lime and basil.
Might sound weird, but don’t knock it until you’ve tried it!
The idea for this recipe came from my sister, who a few years ago was raving about what a great combination basil and strawberries is. So obvisiously I had to try it out and my sister was indeed right.
But I like to try out new things, hence I thought, why not add lime and a drizzle of honey to it to marinate the strawberries? And then leave it marinate for a while so all those juices and flavours could get infused and create some magic.
And the result was pretty magical.
Marinating the strawberries brings out the sweetness as mentioned, but it will also bring out the juices from the strawberries. So when you marinate the strawberries you will have these sweet strawberries with a hint of lime and basil, and in the bottom of serving bowl you will have this juice that is just so scrumptious that it make me wanting to make some marinated strawberries right now.
Finish this dish of with a dollop of greek yogurt, coyo, or for a even more indulgent version, a small dollop of creme fraiche. And you’re done! Easy right?
This is great as a dessert for warmer days when you want something sweet but nothing to heavy. Or whenever you want. You would even have this on a buffet table. Just make more of and place it in a big bowl so people can help them selves.
- 400 g strawberries, quartered.
- 2 tbsp lime juice
- 1 small handful basil (about 5 big leaves or 10 large ones)
- 2 tbsp runny honey (e.g. acacia honey)
- In a bowl, combine lime juice, basil and honey. Whisk until combined.
- Add strawberries and mix well with the marinade.
- Put a lid or clingfilm over the bowl and leave to marinate for 1 hour in room temperature.
- Serve with a dollop of greek yogurt, creme fraiche or coyo.
- Finish with a sprig of basil.
